Rosemary and Lemon Cupcakes

I’m not a big dessert girl. No it’s true. I love looking at beautifully made desserts but all I wanted was a bite or 2 to satisfy that curiosity.

Mr M on the other hand has a much sweeter tooth than I do and it has become somewhat of a ritual that we finish dinner with something sweet every night. Work has been keeping me quite busy for the past number of weeks so I hadn’t bother to make anything from scratch. Ice-cream was the easiest thing to prepare and that was what we had most of the time, until I got tired of it (yes it happens!).

We had some extra rosemary lying around that was begging to be used up last week so I took that as an opportunity to bake. I was tossing between making some shortbreads or cupcakes but decided on the cupcakes instead because the steps were a lot less fussy.

Those rosemary and lemon cupcakes turned out beautifully and they were so easy to make. Best of all you might not even need to step out of the house to get any of the ingredients as they are mostly staples in the pantry, except for the rosemary I guess.

I documented the steps for fun and hopefully these pictures would encourage you to bake some for your loved ones!

I’m notorious for being imprecise when it comes to baking hence what I did may not be the best way to do things. To justify all that, as long as I’m not re-creating a Heston Blumenthal dessert, a few deviations here and there may not cost me as much *sheepish*

I’m planning on baking yet again this week and I hope to be able to share that with you (if my goodie turns out to be as good looking as these ones).
